Amish Baked Oatmeal

1/3 cup butter (or margarine)

2 large eggs

¾ cup brown sugar

1 ½ teaspoons baking powder

1 ½ teaspoons vanilla

1 teaspoon nutmeg or cinnamon (or ½ teaspoon of each)

¼ teaspoon salt

1 cup plus 2 tablespoons milk

3 cups quick cooking rolled oats

Melt butter or margarine.  Grease a 1 ½ quart baking dish.  Break eggs into baking dish and beat well.  Add brown sugar, baking powder, vanilla, cinnamon or nutmeg, and salt.  Mix until smooth.  Whisk in butter and milk.  Add oatmeal.  Stir mixture well, cover and place in refrigerator overnight.  Bake, uncovered, at 350˚F for 35-45 minutes, or until set in the middle.

Serve hot with warm milk poured over.
