

Crunchy Granola
This
can be used as a topping on yogurt or ice cream or eaten as a snack.
2 cups oatmeal, old fashioned
½ cup peanuts, coarsely chopped
½ cup wheat germ
¼ cup honey
¼ cup vegetable oil
1 teaspoon vanilla flavoring
½ cup raisins
½ cup carob or chocolate chips
Preheat oven to 325 degrees F. Spray baking sheet with cooking spray. In a large bowl, combine the oatmeal, peanuts, and wheat
germ. In a small bowl, combine the
honey, oil and vanilla. Using a
spoon, work the honey mixture into the oatmeal mixture in the large bowl.
Spread the mix onto the baking sheet.
Bake for 15 minutes and then remove the baking sheet from the oven.
Use a mixing spoon to stir the mix around a little on the baking sheet;
then add the raisins and carob or chocolate chips.
Return the baking sheet to the oven and bake for 5 to 10 minutes.
Remove the granola from the oven and allow it to cool.
Store in an airtight container.
