

Poor Man's Oatmeal Cookies
1 cup rolled oats (quick or old
fashioned)
½ cup packed brown sugar
1/6 – ¼ cup Splenda
½ cup all-purpose flour
1/8 teaspoon salt
½ teaspoon baking soda
1/8 cup hot water
¼ cup margarine, melted and cooled
½ teaspoon vanilla
Cooking spray
Preheat oven to 350˚F; spray cookie
sheet. Combine oats, sugars, flour,
and salt in a large mixing bowl. Combine
baking soda and water, melted margarine and vanilla and stir into oat mixture.
Roll into walnut sized balls and place on prepared cookie sheet.
Bake for 10 minutes or until golden brown.
Remove from oven and let cool for 2 minutes before placing on a cooling
rack. Yield: 21 cookies. Per cookie: Calories 70; Fat 2.5 grams, Carbohydrates 10g.,
